Broiled Tilapia Parmesan

I love seafood and I'm always looking for new ways to cook it. It is also very nutritious for you. One of my favorite places to find new recipes is on Allrecipes.com. You can find pretty much anything on that site and many different variations. Most of the recipes also list the nutrition facts at the bottom of the recipe. This Tilapia recipe only has 203 calories and 11.4g of fat per serving.


Ingredients
1/2 cup Parmesan cheese
1/4 cup butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
2 pounds tilapia fillets

Directions
Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.

In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.

Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

Chicken Fajitas

1 lb skinless, boneless chicken breast
1 pkg dry fajita mix
3 peppers
1 onion
1/4 c water
Whole wheat tortillas

Slice peppers, onions and chicken into strips. Place all ingredients into a crockpot. Cook on low for 5-6 hours. Place crockpot mixture in a tortilla and top with desired veggies.

I made this recipe last night for my roommates. Everyone loved it; it was a big hit.

I dont know about you, but I prefer recipes with pictures, but I forgot last night. So I will make sure to do that for the next recipe.
